Ethically sourced seafood towers are going to the next level. Townsman in Boston honours New England surf ’n’ turf, layering Jonah crab, middleneck clams and bluefish pâté with ham-hock terrine and beef cheek rillettes. Chicago’s Kinmont aims high with king crab, salmon tartare and bay scallop ceviche. And at Fishing with Dynamite in Los Angeles, the three-tiered Mothershucker stacks up with Pacific oysters, Dungeness or Alaskan crab and a whole lobster.
