Birch sap is getting into the flow this spring. British Columbia label 52° North taps the province’s sub-boreal forests for its single-ingredient drink. Distributed in New York, Säpp is sourced in Ukraine’s Carpathian Mountains. And France’s Eau Bouleau, from trees in Picardie, and the U.K.’s Tapped, from Finnish forests, will get you out of the woods when thirst strikes.
