The Taiwanese drink is getting an artisanal overhaul, as shops do away with technicolour powders in favour of fresh ingredients. The Alley in Markham, Ontario, hand-rolls its own tapioca in four flavours – matcha, strawberry, black sesame and chocolate – before mixing them into creative combinations, like the Garden Tea (Assam black tea, milk and Oreo crumble). Pearl’s Finest Teas in Los Angeles lets you add boba to fresh juices, including a blend of watermelon, mint and matcha. And London’s Biju steeps each cup to order in pastel-hued drinks that have already kicked up a social media brew-haha.
