01 | The shop
This small open-kitchen candy store on the Plateau’s cobblestoned Avenue Duluth has art on the walls, striped counters and multicoloured packaging featuring the cartoon likeness of owner Chloé Gervais-Fredette.

02 | The chocolatier
Ex-pastry chef Gervais-Fredette opened her own place a decade ago, and has since been mixing playfulness and serious culinary chops in her unique recipes, all using Valrhona chocolate.

03 | Famous patrons
Québécois singer Dumas, artist Geneviève Cadieux and actor Éric Bernier are all regulars, not to mention Sacha Baron Cohen (who entered the store playing the character of a Frenchman).

04 | Signature sweets
Gervais-Fredette is famous for her fleur de sel “bonbon de chocolat,” a salty milk-chocolate ganache hand-dipped in dark chocolate. Monsieur Croquant, Chloé’s version of a Crunchie bar, and Tortelines – a classy take on Turtles – are both addictive reinventions of childhood favourites.

05 | The Valentine’s gift
Go small and tasteful with three chocolates in a heart-shaped wrapper, or make a statement with a 25-chocolate square box offering the range of Chloé’s creations.

01 | The shop
The original Soma location is a brick-lined space in the Distillery District anchored by an 80-year-old Catalan chocolate-grinding machine that visitors spy through a window.

02 | The chocolatiers
Husband-and-wife team Cynthia Leung (a trained architect) and David Castellan (a pastry chef) opened shop in 2003 and now manage two locations. They make all their fair trade, organic chocolate from scratch.

03 | Famous patrons
Meryl Streep, Susan Sarandon and Abigail Breslin have all stopped in. Director Atom Egoyan is a regular, with a sweet tooth for Ruby Red Bars flavoured with barberries and sumac.

04 | Signature sweets
Adventurous customers line up for inventive truffles flavoured with ingredients like gianduja, pop rocks, Douglas fir and arbequina olive oil. The Mayan hot chocolate with ginger, Madagascar vanilla, orange peel and chili is a winter favourite.

05 | The Valentine’s gift
Every year, Soma releases a heart-shaped chocolate especially for Valentine’s Day. This year features raspberry in some fashion; also keep an eye out for a new jasmine truffle, as well as a macadamia nut-and-coffee toffee.
