New York

Clo Wine Bar

It might look more like the starship Enterprise than a wine bar, but Clo Wine Bar – on the fourth floor of the Time Warner Center – is where wine tasters of the future meet. With more than 100 wines displayed in temperature-controlled cases, patrons can click on the multi-touch menu for tasting notes and, with the swipe of a card, fill a Riedel glass with, say, a 2007 Kerner from Manni Nössing. No tip required.

Atlanta

Stats

Be your own bartender at Stats, the upscale sports bar with two beer taps built into the tables. Customers are charged 25 cents an ounce – including the foam – so you might want to brush up on the art of pouring a beer beforehand. (Tip: Turn the tap off when the glass is half full and let the head settle before continuing.)

Amsterdam

MiNiBar

The minibar is the nightclub at MiNiBar, where patrons pick up a key to one of 45 glass fridges lining the wall. And there’s nothing tiny about the selection: 16 types of beer, five varieties of champagne and bottles from Johnnie Walker Black Label to James White organic apple are replenished from behind, so there’s never a busy bartender’s eye to catch.

Berlin

Frarosa

Rent a glass for a euro at Frarosa, one of Jürgen Strumpf’s three weinereien (wine bars), and help yourself to as many German wines as you like. The honour system means that at the end of the night, once you’ve calculated the amount you’ve consumed, bills are stuffed into a fishbowl. But be warned: The longer your stay, the fuzzier your math skills will get.
