Dutch babies, the soufflé-style hotcakes taking over brunch menus, aren’t just for your sweet tooth anymore. Blueberry sausage and fried eggs join rhubarb compote on the puffy pancake at Edmonton’s Canteen. Milktooth in Indianapolis has a manchego and grapefruit bun in the oven, covered with shaved Brussels sprouts and a sherry vinaigrette. And, at Where the Pancakes Are in London, it’s easy being cheesy with a chèvre, Parmesan and cheddar version sprinkled with rosemary and thyme.
