Across the country, locally sourced fried chicken is getting a shakeup. Rethink brunch with fried chicken ’n’ waffles served with watermelon, feta and mint at Montreal’s Bird Bar (pictured). Calgary’s Cluck N Cleaver serves up a 5- or 10-piece order with sides like chipotle-lime corn and bean salad. The Dirty Club at Toronto’s Dirty Bird gets you a boneless chicken thigh and leg sandwiched between waffles with beef bacon and house-made maple aioli, while in Vancouver, Juke’s free-range chicken comes plain or spicy, served with an East Asian peanut slaw.
