Chefs are taking a lunchroom staple out of the lunch box. At Alabama’s Cotton Row Restaurant, southern comfort is sweet: Chocolate brownies are topped with crunchy peanut butter and served with a side of marshmallow cream, strawberry jam and vanilla ice cream. Pastry chef David Chow of Toronto’s Stock Restaurant takes requests for his peanut butter and jelly chocolate bars (don’t forget to call ahead). And Portlandians line up at PBJ’s food cart, where ’wichologists Shane and Keena substitute challah for Wonder Bread, while orange marmalade and housemade peanut butter take a hit of sriracha, curry and basil. Who said Mom knows best?
