Made to order on a chilled steel sheet, rolled ice cream is Thailand’s favourite frozen dessert. At Toronto’s Arctic Bites, taro and coconut rolls are capped with lychee jelly and condensed milk, while Sweet Tooth Ice Cream in Calgary gets around the sweet and salty divide with sea-salt caramel chips and crushed pretzels. Washington, D.C.’s Icy Code twirls honey matcha with fresh berries and white-chocolate pearls. And Chelò Creamery in the Los Angeles area is in the loop with exotic ingredients like dragon fruit, durian and chia seeds.
