Swedish hotelier Daniele Kihlgren has transformed the prehistoric grottoes of Matera into a boutique hotel, where candlelit honey-coloured caves house sleek egg-shaped Philippe Starck bathtubs that are anything but prehistoric. Ask for a corner table at the adjoining restaurant (the owner makes a mean pannacotta) set in a centuries-old church dug out of solid rock.
