The outlook is rosy this summer, as ice cream shops embrace the staple of Middle Eastern sweets. Montreal’s Ca Lem adds roasted pistachios to its rosewater cone, and at its flagship in Santa Ana, Cauldron Ice Cream sprinkles scoops with a crunchy coat of rose-flavoured sugar and serves the floral treat in a puffle (their specialty Hong Kong-style fluffy waffle cone). Chaeban Ice Cream in Winnipeg uses a traditional Syrian ricotta recipe for extra creaminess. And with a refreshing rosewater and raspberry sorbet, Australia’s Glacé in Windsor, New South Wales proves that every rose has its cone.
