Tap into maple syrup season at these four sugar shacks.

La Cabane

Skip the trek to the bush this year and hit La Cabane in the Old Port, a sleek space dotted with white brick walls and a mounted moose head. Old-timey fare is reinvented as sophisticated dishes – think bison smoked meat – thanks to Newtown’s chef Martin Juneau. And for the ultimate nightcap, try the hot chocolate, which is  topped with whipped cream and mint gelée, and served as a shot.

It may be tough to get a table at Martin Picard's sugar shack north of Montreal, but you can enjoy his recipes all year long thanks to his book Sugar Shack Au Pied de Cochon.

Davenport Maple Farm Restaurant

Shelburne, Massachusetts
Finnish pancakes – custard-like sheets that are crispy on the outside – aren’t the only reason cars are parked for miles outside Davenport Maple Farm. While you wait for a table, check out the flags on the giant map showing from where visitors hail (Peru is well represented) and the jars filled with various shades and grades of syrup, backlit by a large window to look like a wall of stained glass.

Leane and Michael’s Sugarbush

Traditional fiddling, a llama-petting zoo and crosscut sawing (your “slice” of log is branded with a maple leaf) are only a drop in the bucket at this family-run outfit. Once you’ve worked up an appetite throwing a tomahawk, dig into waffles topped with blueberries, ice cream and maple syrup or pulled-pork sandwiches with coleslaw and maple baked beans on the side.

The Kinsmen Fanshawe Sugar Bush

Get a generous helping of history with your sugar fix at this woodsy shack. Your guided tour – tracing the production of maple syrup from pre-colonial Canada – ends in the “pancake pavilion” nestled in the bush, where plates piled with sausages and pancakes glisten with maple syrup. Once you’ve filled up, tap into your inner child with a ride on a horse-drawn wagon.
