Against backlit onyx, bar and lounge manager Brad Stanton oversees a selection of handmade mixes, oak-aged cocktails and craft beers so spectacular, you won’t mind drinking while standing – so long as you still can. Sip Shiso Lindos: shiso-infused triple sec with agave, reposado tequila and fresh lime – in a glass washed with Ardbeg Uigeadail Scotch, rimmed with sea salt and finished with a shiso leaf.
Snack Power-chef David Hawksworth’s spicy Bang Bang Chicken, with compressed honeydew melon, cucumber and peanuts, is a playful wink to nearby Chinatown.
