Four New Age "butchers" for vegan and vegetarian travellers.

Embracing the oxymoron that is meat-free meats, butcher shops are going from dry-aged to New Age. The vegan charcuterie at the Herbivorous Butcher in Minneapolis includes vital wheat gluten Mexican chorizo sausages, deli bologna and teriyaki jerky that's lightly smoked and twice-glazed in ginger, garlic, soy sauce and mirin. Toronto's YamChops specializes in beet-burger patties, coconut bacon and carrot lox and prepares pulled chicken sandwiches made of soy, wheat and pea protein. De Vegetarische Slager's concept store in The Hague sells sausage rolls made with locally cultivated lupin, while the butcher counter at Zurich's Hiltl Laden offers a plant-powered tartare.
