Stephan Pyles is one of Dallas’s big-name chefs who specializes in Southwestern cuisine. His eponymous restaurant in downtown Dallas is heavy on Latin American influences, with “smoky, spicy, aggressive and bold” flavours, reads the seasonally changing menu. A recent example we enjoyed: Texas Hill Country wild boar chops with red lentil tacu-tacu, housemade boar sausage and pickled peaches. Yowza.
