At this small-plate eatery inside The Cosmopolitan Hotel, Mexican and Chinese dishes make surprising bedfellows. But the neon-sign hotspot is not some strange fusion concept; there are actually two kitchens, one Chinese and one Mexican, which face off across from one another as you enter the restaurant. The menu offers traditional Chinese dishes, like bite-size dim sum and delicately steamed Chinese BBQ pork buns, alongside Mexican favourites like homemade guacamole and carnitas tacos. That’s not to say Chef José Andrés’ menu is strictly segregated. His most creative and memorable dishes combine flavours from both cultures.
