Housemade ponzu and soy sauces, robata grilled on imported Japanese charcoal and a list of more than 50 sakes by the glass or bottle are just three reasons why big-name chefs and nightlife impresarios pack this intimate Japanese joint in Las Vegas’ Chinatown after hours. The blackboard daily specials – seared bonito in smokey ponzu and striped jack sashimi were among the dozen daily dishes when we visited – and the crispy asparagus, rolled in a crunchy crust of crushed rice crackers and green tea salt, are a couple more.
