At this sparse, dark room on Roncesvalles, chef Hopgood serves up nouveau Scotian cuisine that’s equal parts nostalgia and now. There are throwbacks to youth (his mother’s hot crab dip served with Triscuits), to 2 a.m. in Halifax (donairs of puffy homemade pita, shaved beef and pork in deliberately cloying garlic sauce, delivered on crinkled paper bags), and to adulthood (elegant pale tuna in Atlantic seaweed broth, with black-eyed peas, pork cracklings and radishes conjuring Japanese ginger).
