Having spent a decade in Michelin-starred kitchens in Europe, chef David Hawksworth is aiming to bring one home here. Although he is committed to using only locally sourced ingredients, his interpretation of a true Canadian menu includes such diverse dishes as jungle pork curry, yellowfin tuna carpaccio and pan-seared Sooke River trout. This space is elegant and thoroughly modern, with a giant, elaborate chandelier, floral carvings on the wall and an installation by locally born, globally celebrated artist Rodney Graham.
