Bill McCaig wanted to create the most authentic Neapolitan pizza you could get outside of Naples. He’s succeeded with an Acunto wood-fired oven that bakes the pizzas at 900°F heat for just over a minute, so the thin crust is bubbly and crisp and the centre is moist and light. They aren’t meant to be sliced, so be prepared to use your hands. It might feel foreign, but that’s the point.
