A quick glance around Tableau in the Loden Hotel reveals a surprising freedom from West Coast design clichés – you won’t find any Western red cedar accents here. Instead, the restaurant combines old-world classic elements with a modern spin. The culinary approach is French, featuring carefully selected local, seasonal ingredients. A case in point: the spot prawns, served up in a bisque, grilled, fried or as a carpaccio by executive chef Marc-André Choquette.
