Pen Pal
A bright, citrusy and effervescent cocktail to pair with light seafood and vegetable dishes like those on the menu at Sabayon, one of Air Canada’s Best New Restaurants of 2024.
Ingredients
- 1 oz Don Julio Blanco Tequila
- ½ oz Italian aperitivo
- ¾ oz fresh lemon juice
- ½ oz simple syrup (1 part water, 1 part sugar)
- 2 dashes Peychaud’s bitters
- 2 oz champagne or sparkling wine
- Grapefruit twist (for garnish)
Combine all ingredients except sparkling wine in a shaker with ice. Shake well and strain into a Collins glass over cubed ice. Top with champagne and garnish with a grapefruit twist.

First Steps
A clean and dry cocktail with subtle hints of fruit and herbs that pairs perfectly with the bold, spicy flavours at Toronto’s Mhel, #2 on the list of Air Canada’s Best New Restaurants 2024.
Ingredients
- 1 ¾ oz Tanqueray No. Ten Gin
- ¼ oz maraschino liqueur
- ½ oz dry vermouth
- ½ oz fino sherry
- 2 dashes Angostura bitters
- Lemon zest (for garnish)
Stir all ingredients with ice and strain into a chilled Nick & Nora glass. Garnish with a twist of lemon zest.

A smoky and savoury cocktail that pairs well with earthy, umami-rich dishes like those on the menu at Maison de Soma, one of Air Canada’s Best New Restaurants of 2024.
Ingredients
- 1 ½ oz Johnnie Walker Black Label
- ½ oz Italian Amaro
- ¾ oz grapefruit juice
- ½ oz lemon juice
- ½ oz simple syrup
- 4 dashes Marmite Solution*
- 1 drop saline**
- Grapefruit wedge (for garnish)
Stir all ingredients together with ice and strain into a rocks glass. Garnish with a grapefruit wedge.
*Marmite Solution: Dissolve 10 g of Marmite in 100 ml water.
**Saline: Dissolve 20 mg of salt in 80 ml water.
